and easy recipes you and your kids can try out in the kitchen. They’re simple
and short and are perfect starter recipes for kids who want to express
themselves with food.
- Pumpkin Pie Smoothies
Prep Time: 10 min. Makes 4
servings.
Ingredients:
w 1 can (15 ounces) of chilled pumpkin
w 1-1/3 cups chilled evaporated milk (about 10 ounces)
w 1 cup of orange juice
w 1/3 cup packed brown sugar
w 1/2 teaspoon pumpkin pie spice
w 1/4 teaspoon ground cinnamon
w 1 small ripe banana, cut into thirds
Make sure an adult supervises
while cutting the banana. Combine all ingredients into a
blender, and blend until smooth, then pour into a glass.
Best enjoyed with a straw.
2. Key Lime Pie Cookie
Balls
Prep Time: 25 min + chilling.
Makes 3 dozen.
Ingredients:
w 1 package (8 ounces) cream cheese, softened
w 1 cup crushed vanilla wafers (about 30 wafers)
w 1 cup graham cracker crumbs
w 2/3 cup plus 1/2 cup confectioners' sugar, divided
w 2 tablespoons lime juice
w 2 teaspoons grated lime zest
w 1/4 teaspoon salt
w 1/4 teaspoon ground cinnamon
In a large bowl, beat cream
cheese, wafers, cracker crumbs, 1/2 cup sugar, lime juice and zest, salt, and
cinnamon until they are all blended.
Shape the mixture into 1-in.
balls, then place on parchment-lined baking sheets. Refrigerate them for about
1 hour until they become firm.
After refrigeration, roll the cookie
balls in the remaining 1/2 cup confectioners' sugar. Store cookies between
pieces of parchment in an airtight container in the refrigerator.
3. 3. Strawberry Lime Smoothies
Prep Time: 5 min. Makes 3
servings.
Ingredients:
w 1 cup of strawberry yogurt
w 1/2 cup of 2% milk
w 2 to 4 tablespoons lime juice
w 2 tablespoons honey
w 1/4 teaspoon ground cinnamon
w 2 cups fresh strawberries, stems removed.
If you are removing the
strawberry stems manually, make sure there is adult supervision. Combine all
ingredients into a blender, and blend until smooth, then pour into a glass.
Best enjoyed with a straw.

4. Chicken &
Bacon Roll-Ups
Prep Time: 20 min + chilling. Makes 4 dozen.
Ingredients:
w 1 can (9-3/4 ounces) chunk white chicken, drained
w 1 carton (8 ounces) spreadable garden vegetable cream
cheese
w 1 cup salsa, divided
w 4 pieces ready-to-serve fully cooked bacon, crumbled
w 6 flour tortillas (8 inches), room temperature
Mix chicken, cream cheese, 1/2
cup salsa and bacon and spread over tortillas. Roll them up tightly, wrap them
in plastic, and refrigerate for at least 1 hour. Just before serving, unwrap
and cut tortillas into 1-in. slices, and serve with remaining salsa.
